The production of ethanol from biomass via fungal enzymatic methods. Fungal enzymes are naturally occurring proteins that can cause certain chemical reactions to occur in plants, for instance in their structural and storage polysaccharides. Fungi, including yeast (Fig. 1), are a key source for some of the industrially important enzymes used in the process of enzymatically hydrolyzing polysaccharides in biomass into glucose (a simple sugar), which can then be fermented into bioethanol.
