A section of animal agriculture concerned with the production of milk and milk products. Over the course of thousands of years, humans have selected some mammals, especially the cow, goat, and water buffalo, for their ability to produce quantities of milk in excess of the requirements of their young. At the same time, humans have improved the management and nutrition of dairy animals so that milk can be produced more efficiently (Fig. 1). The production of milk includes selection of the animals, breeding, raising young stock, feed production, nutrition, housing, milking, milk handling, sanitation, and disease control. In addition, the disposal of milk, surplus animals, and manure must be handled properly. See also: Agricultural science (animal); Animal breeding; Mammalia; Mammary gland
