Pathological conditions caused by pathogenic microorganisms in animals that are consumed as food. The introduction of an infectious disease into an animal population intended for food consumption by humans can have many negative outcomes, including harmful effects on public health from people consuming infected meat or contracting disease from infected animals, economic hardship for the farmer and agricultural industry, and undesirable or even inhumane conditions for the animals. As such, proper management practices and inspection of animal health are necessary to safeguard against the spread of infectious disease (Fig. 1).
