Interfaces play an important role in the physical world. The air–water interface is involved in evaporation from the seas and the condensation of pollutants on rain droplets, causing acid rain. The air–water interface is also crucial to the functioning of our lungs. Liquid–liquid interfaces are used in chemical extractions and are an integral part of oil–water emulsions found in food products. Solid–liquid interfaces are of great technological importance in fields such as lubrication and catalysis. The ability to examine the properties of interfaces in biology is also important. This is particularly true of biological membranes, which represent the interface between the cell interior and the extracellular environment. Analyzing the composition, structure, and dynamics of molecules at an interface is not an easy task due to the extreme difficulty in isolating the interfacial molecules or atoms from those of the bulk material (solid, liquid, or gas).
